French Toast Bake with Brown Sugared Peaches

This is my favorite, make the night before, breakfast.  Enjoy!



4-6 croissants (med/lrg)
3 eggs
2 tsp vanilla
1 cup milk
1/4 tsp salt
1/8 tsp nutmeg
1 jar unsweetened, sliced peaches drained
1/4 cup brown sugar
1 tsp Cinnamon

Grease a 9x13 pan.  Tear croissants into bite-sized pieces and put in a single layer in pan.

Whisk together eggs, milk, vanilla, salt, and nutmeg.  Pour over bread.

Top with peach slices.  Sprinkle with brown sugar and cinnamon.  Cover with foil and chill in the refrigerator overnight.

Preheat oven to 350.  Bake 30-40 minutes covered, then uncover and bake for an additional 10 minutes until puffed and golden brown.  Serve immediately with maple syrup.
