Pancake Batter

Just because I am eating left over pancakes from breakfast 3 hours ago and they are still great, I thought I would share the recipe.  This is my spin off from my grandma Russell's recipe.

1 cup flour
4 tsp baking powder
1/4 tsp salt
1 tbs sugar

1 cup milk
1 egg
1 tsp vanilla

1/4 cup melted butter

In a medium bowl whisk all dry ingredients.  In a liquid measure, mix all the wet ingredients except the better.

Whisk the dry and wet ingredients together until no lumps, then whisk in the melted butter.

Sometimes to reduce the fat, I use skim milk and 1/2 cup of egg whites instead of the egg.
